Brussels Airlines collaborates with two Michelin-starred chef Michaël Vrijmoed

From 1st October, passengers in Brussels Airlines' Business Class on long-haul flights will be treated to a culinary journey crafted by two Michelin-starred chef Michaël Vrijmoed. 

Vrijmoed is the latest addition to a roster of fourteen renowned Belgian chefs who have been elevating in-flight dining experiences since 2013. The spotlight in the upcoming menus will be on Belgian vegetables. Chef Vrijmoed - who runs from his namesake restaurant in Ghent, Vrijmoed - takes over the culinary helm from Chef Mario Elias in a continuation of Brussels Airlines' commitment to gourmet cuisine.

A decade after its initiation with Michelin-starred chef Geert Van Hecke, the airline's tradition of serving exceptional Belgian cuisine on intercontinental routes persists in 2023. Each year, a top Belgian chef crafts a three-course meal featuring classic Belgian dishes and locally sourced ingredients. This year, chef Michaël Vrijmoed will curate these menus, which will be updated quarterly. As in previous years, Belgian wine expert Jan De Clercq and beer sommelier Sofie Vanrafelghem will select accompanying wines and local Belgian brews, respectively.

A Spotlight on Vegetable Cuisine: The menus crafted by Vrijmoed echo his restaurant's reputation as a vegetable haven. Business Class passengers on long-haul flights will have the choice between meat, fish, and vegetarian options for both the appetiser and main course, all inspired by the season's freshest produce.

For starters, passengers can opt for Vrijmoed's signature beetroot dish, featuring Doyenné du Comice pear, mustard seed, and horseradish sauce. The main course offers a vegetarian option of celeriac, accompanied by soil-grown chicory and crispy Jerusalem artichoke. Meat or fish options include pheasant or eel in green, each accompanied by a range of carefully curated ingredients. Dessert choices range from a cheese platter featuring East Flanders classics like Belgian Wittekop or Biloete, to a hazelnut chocolate cake served with a vanilla-coffee sauce.
