TAP Air Portugal has revealed that it is collaborating with Lisbon-born two-Michelin-starred Masterchef Henrique Sá Pesso as it brings the finest Portuguese cuisine to its Business Class (branded as Executive Class) passengers.
The TAP Local Stars Project - in conjunction with The Art of Tasting Portugal - is bringing together the country's top twelve chefs, from different regions of the country - highlighting the local cuisine and indeed wines.
Each chef will create a menu - using their region's highest quality ingredients - to produce mouth-watering dishes. Twelve chefs, twelve menus - each with one “special” dish!
Chef Henrique - who holds two Michelin stars for his Alma restaurant in Lisbon and also runs JOIA - the acclaimed Iberian-cuisine restaurant in London's Battersea Power Station development - is using grouper as his star ingredient. This fish dish is one of his - and indeed the country's - favourites and will appear on all long-haul Business Class TAP Air Portugal flights this March and April.
You can create this tasty dish at home - with ingredients and cooking instructions on the TAP Portugal website.
